Secrets of Deglazing a Pan

If you have ever wondered what ‘deglazing a pan’ means, read on. Deglazing is an easy and cool way to turn the leftover bits in a pan that you have cooked meat, chicken, or other food into, into a great sauce. Let us say, for instance, that you have grilled a few steaks in a pan, and there is that lovely brown layer in the bottom of the pan. Instead of throwing it away, and wasting that flavor, why not leave it on the heat, and add some liquid? It could be wine, stock, or even water. Once you have done that, you should already have the basis of a thin sauce. Now take it a step further. Add a few herbs, spices or other flavorings to the liquid in the pan, and simmer for a few minutes. Then remove it from the heat, and stir in a little cream. I can guarantee you, you will make the best sauces ever this way, and it really does take minutes to do.
