Secrets of Truffle Oil

 

Truffles are one of those little luxuries most of us would love to try, but that are simply beyond most of our means. Snuffled out of the ground by dogs or pigs at the foot of giant oaks in France, they’re on par with saffron and caviar in terms of being expensive delicacies. However, although the real thing is worth more than its weight in gold, and most of us will never be able to afford even a sliver, there is an alternative - Truffle oil. Truffle oil is oil flavoured with this elusive little fungus, and while it’s not the real thing, it tastes almost as good. You would not use it for cooking, but it can be used as a salad dressing, or as a part of a sauce over meat, fish, or chicken. The good news is that truffle oil has a distinctive flavor, which means that you don’t need to use a lot to get great flavor. A drizzle or a drop or two is all you need, so even though it’s expensive, it will last a long time.
