It may be a little old fashioned in these days of fusion food, but a cheese board is still a great way to end off a meal.
The secret to a great cheese board though is variety. You want to have hard and soft cheeses, strong, full flavored ones and mild, creamy or sweetish ones. Ideally, I think, four cheeses of varying flavor and texture is the minimum for a great cheese board.
Then, you want to add extra’s, that contrast and compliment your cheese selection – crackers are a great start, and dried fruit always work well. Pickles are another good choice, and fresh figs are never a bad idea with great cheeses.
In fact, if you get the cheese board just right, you can almost skip the meal, and just enjoy the fabulous flavors.
