The Secrets of Oriental Orange Chicken

This light chicken dish is really easy to make, but the blend of flavours are absolutely fabulous. Place about 1,2 kg chicken pieces of your choice into a baking dish to fit. Mix 30ml soy sauce, 30ml honey, 30ml lemon juice, and 15ml sunflower oil, and pour over the chicken, making sure that it is well-coated, and let stand for about 45 minutes. Cover the dish and bake on the middle shelf of the oven at 160 degrees C for about 45 minutes. Stir together 400ml fresh orange juice, 30ml corn flour, 1 bunch of chopped spring onions, 5ml peeled, chopped root ginger, 2 cloves crushed garlic, and 2ml finely grated orange rind, and pour over the chicken. Turn the oven up to 180 degrees C, and bake for about another half an hour, basting once, until the chicken is tender and browned, and the sauce thickened.
