      When my grandma stayed with us, she would prepare soup for us everyday. I missed her soups now that she has moved away.

      My favorite soups have got to be:
      Campbell (mushroom & chicken)
      Authentic Thai tom yum
      Duck meat with salted vegs
      Sichuan soup with pork ribs
      Pig's stomach/ pig's organ soup

            Hmm looking more at the chinese traditional soups ... I tried cooking the chicken soup on a few occasions, but it just don't taste right

              chicken soup are quite simple to make

              this is something i make

              chicken maryland - 2 pieces
              watercress - aka xi yang cai
              red dates (soaked and destoned)
              mushrooms stems - 1/2 cup (soaked)

              run chicken maryland (skin removed) under hot boiling water
              then put the chicken pieces into the pot of water
              add in red dates and mushrooms
              remove gunk at the top of the soup (oil)

              simmer over the fire for another 1 to 2 hrs till the chicken and such is soft
              add in watercress and add salt for seasoning

                Been printing out some recs from other threads too...great site.

                Oh one thing about soup is we gotta run hot water over raw meat? I used to throw in the raw meat together with water for boil....is that the reason why my soup always turn out weird?

                  the hot water helps to make the soup clearer and remove the impurities from the meat
                  if not, u probably need to be abit more diligent and scoop out the gunk from the top of the top
                  and yeah keep the lid open!

                    Fish head with salted veg soup

                    a fish head - i usually buy red snapper
                    salted veg (1/2 cup - cut in bite sizes)
                    tomatoes
                    beancurd - 1/2 block
                    ginger (1 small pieces, sliced)

                    run fish head over hot water
                    throw in salted veg and ginger in a pot of water
                    boil for 20 mins or so
                    throw in fish head followed by tomatoes and ginger
                    add salt (if applicable) and pepper for seasoning
                    garnish with parsley and serve

                      any one know how to make salted veg wtih duck? and natnatviv, what do u mean run fish head over hot water? never make soup before, so abit blur... thks....

                        run hotwater over fish head over hot water -> to run it with hot water, to get rid of the impurities

                        salted veg with duck is the same theory
                        but u do have to remove all fats before dumping the duck in to cook

                          Ok for the raw meat scalding, I just boil some hot water, and pour all over the meat? Or?

                            yes boil the water and then pour over the meat
                            u can always subsitute fish for anything else

                              just to add on -- remember to soak the salted vege in water for a short while first. Otherwise, you will end up with very salty soup.
