        hmm some ideas

belacan - u can roast it in the oven but beware of the smell lingering in your kitchen ( i use 1/2 block)
        chillies - fresh (1/2 kg - 1 kg)
        sugar
        salt
lemons - 2 or more ( u can use the green limes as well)

        Method
        blend chillies- in blender
scoop out and blend roasted belacan

then mix chilli and belacan together till smooth
belacan can be salty so be sure to add sugar to taste
add in lemon juice (i add in quite lot)

        done!

Do you have recipes for good chicken rice chilli (the garlicy kind)? My hubby loves those, thinking of making some.

ahhh yes me a hainanese so i can write u some authentic recipes

              ingredients
ginger 1 (young ones not those oldies)
chillies (fresh, not chilli padi) - remove seeds and stem
garlic ( 4 big cloves) - some pple dont like it u can add less
lemons - 2 large ones ( use green limes also okie)
              sugar
              salt

grind chilli - use mortar (nicer i was told by my ma)
              add in ginger, garlic
              then add in lemon juice

grind till all blended (right word?)

then add sugar and salt to taste
my ma said no blender, cos it will affect the taste

can keep in fridge up till a month (cos u are using fresh chillies)

Thanks natnatviv! Chicken rice chilli sounds easier to make than belacan. Will try it out one of these days.
